Ingredients
2 slices sourdough or multigrain bread
2 eggs
2 tbsp cottage cheese (trust this)
Salt & pepper
Chili flakes or paprika
Butter or olive oil
Optional upgrades (choose 1–2):
Avocado slices
Sautéed spinach
Grilled mushrooms
Cheese slice (yes, allowed)
How to make it
Whisk eggs with cottage cheese, salt, and pepper.
Cook slowly on low heat – soft, creamy, not dry.
Toast bread lightly with butter or olive oil.
Assemble with your chosen add-ons.
Press gently. Eat warm.

Ingredients
1 cup strong brewed coffee (cooled)
Ice
Milk of choice (dairy / oat / almond)
Brown Sugar/ Date Syrup
A dash of vanilla essence.
